middle eastern- finally made garlic sauce!
Finally I have figured out a good way to make garlic sauce at home. We use it as spread on shawarma sandwiches, but until now I had to buy the sauce from the restaurant or deli. Here's how I do it.
put a half of a head of garlic through a garlic press and then pound it in a garlic pounder with a shy 1/2 teaspoon of salt. Mix with 1/2 cup of canola or any other lite flavor vegetable oil. Add to blender or food processor and turn on to high. While the blender is still on add the juice of one lemon or lime. Then add 1/2 cup of extra virgin olive oil. Blend for a few minutes. Add one egg white and continue to blend until the sauce is smooth and like mayonnaise.
Remove from blender and stir well. It's delicious as a sandwich spread or simply as a dip for pita bread.
