Marinade items: finely chopped onion, 1teaspon ground turmeric, 1 tablespoon grated fresh root ginger, 2 crushed garlic, 1 tablespoon chili sauce & 2 tablespoons tamarind paste. Place all marinade ingredients in shallow bowl, add 4 swordfish or marlin steaks (150g each) & turn to coat it. Leave it to marinate if time allows. Lay 4 squares of foil on a work surface & place the fish & marinade on top. Top with tomato slices & 2 lemon grass stalks. Fold up the parcels & secure them. Transfer to baking sheet & cook in preheated oven, 200deg C for 8mins or until fish cooked through. Serve with egg noodles. |
