Place chicken breasts (4 skinless chicken breasts about 150g each) between 2 sheets of Clingfilm or nonstick baking paper and flatten them with rolling pin until they are 2cm thick. Lay them on baking sheet & brush with hoisin sauce. Cook under a preheated hot grill for 4min. turn over brush with hoisin sauce & grill for 3mins or till chicken is cooked. Warm 12 Chinese pancakes in a bamboo steamer for 3mins or until heated through. Thinly slice the chicken & arrange on a serving plate. Serve with the pancakes, bowl of cucumber (cut into matchsticks), bowl of spring onions (thinly sliced) ,fresh coriander & diluted hoisin sauce & allow everyone to assemble their own pancakes. |
