Cook 375g angel hair pasta in large sauce pan of lightly salted boiling water for 10-12mins or as packet instructs. Drain well.
Heat 25g butter in frying pan over medium heat & fry 4 chopped plum tomatoes for 2-3 min until soft. Pour in brandy, turn up heat to high & cook for 2mins.
Add 200g cooked peeled prawns, 3 tablespoon double cream & tablespoon of chopped tarragon heating through. Season well with salt & pepper.
Toss the sauce with hot pasta & serve immediately. |
