Soak 250g flat rice noodles in bowl of lightly slated boiling water for 10mins or till soft. Drain & set aside. Heat oil in a wok over a high heat, add 150g peeled & deveined raw tiger prawns, 2 crushed garlic cloves & stir fry for 1min. push them on 1 side & add 1 beaten egg, stir until lightly scrambled. Add 1 grated carrot, 200g bean sprouts, and 1 tb brown sugar, 3 tb Thai fish juice,2 tb lime juice including noodles & toss thoroughly until all ingredients are well mixed & heated through. Transfer to a large serving dish & top with chilly, spring onions & coriander 7 serve with lime wedges. |
