Warm Pasta salad
Cook orzo pasta (250gm) in saucepan of lightly salted boiling water for about 6mins. Add peas (250gm) & cook for 3mins until well cooked. Drain well. Meanwhile heal 2 tablespoons of oil in a frying pan & stir fry the spring onions (6 trimmed & chopped) and garlic (2, well crushed) for 1-2misn until softened. Stir in the pasta with artichokes (8 marinated & thickly sliced), mint & remaining oil (4 tablespoons). Toss well & season with salt, pepper & leave it for 10mins. Stir lemon juice & serve the salad warm.
