The difference between raw calories and cooked calories is similar to the difference between fresh air and polluted air. It is impossible for people to get fat on raw foods regardless of calorie intake. The active enzymes in raw food permit food be digested so efficiently in the stomach that not only are the gastric ills of putrefaction and fermentation avoided, but also calories are effectiently burnt by the body so that fat does not accumulate.
