Roast Turkey breast with garlic sauce: Serves:10 The white breast meat of turkey is exceptionally low in fat & cholesterol. Preheat the oven to 180deg C. cut off any fat from turkey breast, then place with skin side up in a shallow roasting tin. Brush with olive oil all over breast & sprinkle with black pepper. Cover loosely with foil & roast for 45min. Remove foil & scatter crushed 15 garlic clove around turkey, coating them with the pan juices. Roast uncovered for further 1.45hrs or till thickest part of breast temperature is 77degC. Remove skin; transfer the turkey to a platter. Cover it with foil & keep warm. Spoon off all fat from roasting tin leaving pan juices. Squeeze the garlic cloves, mix properly. Place the roasting tin over moderate heat. Stir in 1/3rd (of 350ml) of stock & heat until bubbling. Transfer to a blender & puree until smooth. Return to roasting tin & bring to boil. Stir in remaining stock & pepper & 2 teaspoon lemon juice.
