New Style Chicken salad
Cut four (675g each) chicken fillets into 4 slices. Place in a shallow dish. Combine 2 red, yellow or green peppers, 1 thickly sliced onion, 2 thickly sliced courgettes & 175g halved cherry tomatoes in another shallow dish.
In a small bowl mix together 4 tb olive oil, 2 tb lemon juice & 1 teaspoon finely grated lemon zest, 2 teaspoon dried basil & black pepper. Spoon half of this mix over chicken slices and remainder over vegetable. Toss to coat & cover both dishes with cling film & marinate in fridge for 2 hrs.
Preheat grill, remove chicken & grill on pan for 6-8min or until cooked through, turning twice.
Drain vegetables & place in grill pan. Grill until browned & softened while brushing with marinade in between. Serve grilled chicken & vegetable on bed of salad leaves.
