Put 125g self-rising flour, lemon rind (1/2lemon), 1 teaspoon baking powder & 1 tablespoon caster sugar into a bowl. Add 1 egg & 1 tablespoon lemon juice then gradually whisk in 150mil semi skimmed milk until smooth & thick batter is formed. Stir in 125g blueberries. Heat a griddle or large frying pan then rub it with kitchen paper drizzled with little oil. Drop spoonfuls of mixture, well spaced apart on pan & cook for 2-3mins until bubbles form on surface & under side is golden brown. Turn pancakes over & cook 2nd side. Stack on four plates & drizzle with maple syrup & decorate with few berries. Serve with ice-cream. |
