Default Spices

Everyone uses spices in their food, and its for the food to get a better taste and give it some flavour. Spices play an important role when preparing and making food. Many different places in the world use different spices to flavour their food, such as South Asian cuisines (Indian, Pakistani etc) use spices such as cumin seeds, turmeric, garam masala (which consists of many spices blended together) and many other spices. Italians generally use dried herbs in their foods such as oregano, basil and so on.
Chinese uses many different spices according to their own locals places, some of spices they use include star anise, sichuan pepper and many others.
There are many other countries and places which use their own define spices in their foods, add on to this list if you know of any others.

I often use garlic or garlic powder, black pepper, and some parsley. I am not into seasonings that change the taste of the dish too much, I rather prefer those that enhance the natural taste.

Default Spices

I too use spices like pepper, garam masala, ginger-garlic paste, coriander powder etc.

Garam masala and pepper once in a while i can use for non-veg items. Regular use will create stomach upsets.

Ginger and garlic i almost use daily.

I use clove, cardamom, cinnamon, black pepper,
ginger, garlic, mint and cilantro.

I cook onion, tomatoes, chilli powder with the above.

then I decide what dish I want to make ;-)

and then that goes into this mixture

rice -> biriyani
meat -> curry
vegetables -> veggie curry

I use very few spices in my menu: garlic, onions, pepper, salt...
I don't like too many spices in my food.

I use a lot of different spices too, the basics being turmeric, cloves, paprika and many others which I have got from other countries (the names of the spices aren't coming to mind at the moment). Like Harpreet mentioned I also use a lot of herbs like oregano, basil and so on too!
