1. Red tomato base: Tomatoes with or without small quantities of lentils (moong, masoor). (Plate 4) 2. White vegetable base: Pressure-cook together one medium-sized peeled potato, 3-4 inches dudhi/lauki, one onion and a few cloves of garlic. The pureed soup looks like a cream base but is healthier and tasty at the same time. (plate 3). 3. Green base: Puree lightly boiled/cooked spinach (palak) along with condiments of choice garlic, onions, ginger etc. |
