Default Avial Recipe please

I had this amazing vegetable dish called Avial at the place of my husband's Malayali friend. It was not spicy at all and had an amazing coconut flavour. Can anyone give me the ingredients and recipe for Avial please?

Its quite a simple recipe and i am sure you will find loads if you simply google nevertheless.......... here's the how i do it

Make sure you have a variety of vegetable , carrots, yam,raw bananas,potato, raw mango, ash gourd ,beans , drumsticks, cucumber ...green chillies (a couple or 5-6 )

It's alright if you miss out on one or two or add some others just make sure
you don't add stuff that is likely to get squashed and go gooey ..


Wash and peel the vegetables and cut them all into 2- 3 inch long pieces , make sure you cut all the veg up into similar sizes.
otherwise the small ones will cook faster and get squashed
.

Grate and coarsely grind half a coconut with the chillies and a 1/2 a teaspoon of cumin seeds with very very little water.Add 1/2 cup or so of sour curd to this.

Now cook the vegetables in a thick bottomed vessel on low flame with a couple of spoons of coconut oil add the veggies that will cook fast last....
You can also cook the vegetables in a little water with salt and turmeric


Put lid on the veggies till they are cooked ,but take them off before they go soft.

Add around 1/2 a teaspoon of turmeric powder and salt ( to taste) to the vegtables once they are done.

Add the ground coconut and curd paste to the vegetables and heat through, take care and do not heat for long or.... you will get curdled avial

Add a few spoons (4-5 spoons)of coconut oil and a few curry leaves , Mix well.

Thanks Dear!! This is really so easy! I was told about it, but knew something was missing... it was the curd!! I'm going to cook my Avial soon.

PS: Sometimes I feel too lazy to google!
