Vegetables that can be eaten raw and make excellent salads are carrot, cucumber, radish, beetroot, tomato, cabbage, etc. Mint and coriander leaves can be used for garnishing or to make chutneys. Carrot is the king of them all being an excellent source of the two most important protective/antioxidant Vitamins A and C; two or three medium sized raw carrots a day meets the daily requirement of Vitamin A.
