Smile Carrot

Carrot
Carrot must have a very important place in our diet because of the high percentage of beta-carotene it contains. Research all over the world has revealed the disease preventing value of this vegetable. Carrot can be eat in raw form instead of cooked.

I love crunching on a fresh raw carrot, especially when I have grown some myself in our garden. They are sweet and yummy. I also add carrots when I make pickled vegetable mixes. I can't stand cooked carrots though... They are just yuck.

The whole family loves carrots. My main reason for liking them is that they are so versatile. I roast them with honey, mash them with potato, and grate them into a salad. My daughter also takes raw carrot sticks to school for her lunch.

Do you make homemade coleslaw? We do, and I put a lot of grated carrot in it. Even though I buy the sauce, it tastes so much better than what most restaurants serve.

Does carrot cake actually contain any carrot? I have no idea but I do like it.

Eating raw vegetables gives me a terrible upset stomach, I cannot seem to digest them too well. So I eat my carrots cooked, usually steamed.

I have had carrot cake, and to me it tastes very close to chocolate cake, maybe not so rich. I could not detect any carrots or carrot taste, LOL!

I have tried a dish called Korean style carrots - it is delicious, goes great with potatoes and meat dishes.

I absolutely LOVE carrots. I like to dip them in ranch dressing. I could sit and eat them all day. My mom always told me they were good for my eyes. I ended up needing glasses anyway lol
