Quick summer pudding with vodka
Tip the mixed berries (thawed) into a sieve set over a bowl. After all juice has run out transfer the fruit to a second bowl & mix in vodka & sugar.
Stamp out 7.5cm circles from the bread using fluted pastry cutter. Dip both sides’ of 4 pieces of bread into the berry juice. Place them in individual shallow glass serving dishes.
Spoon half the fruit over bread circles then cover with remaining bread dipped into juice. Top with remaining fruit & juices from bowl. Serve with vanilla ice-cream.
