Default Kheer

Kheer is a form of dessert which is made out of milk by heating it for a long time and stirring it continuously. Sugar is put to it to make it sweet and also dry fruits are used to garnish it. It can be taken hot or cold.

I guess you can also add rice to it... Especially those long grained rice... For India - [URL="http://en.wikipedia.org/wiki/Basmati"]Basmati Rice[/URL] and [URL="http://en.wikipedia.org/wiki/Patna_rice"]Patna Rice[/URL]... and in US - Carolina Rice!

I think Jessika forgot about the rice, cause Im sure she doesn't make kheer without rice!!!!!!!!!!

Do you also need rice powder to make Kheer or can you just use basmati rice? Also do you use whole milk?

Can one of my Indian friends here please offer the exact method for making keer? I love it but don't know exactly how to make it so it tastes like real Indian kheer.

Basmati doesn't go very well for Kheer. I tried Basmati but
didn't like it. Go for a shorter grain and softer rice.

Here's a simple method I use to make kheer.

take a gallon of whole milk and bring to a boil,
reduce and simmer for an hour or so till it becomes
yellow and thick. Keep stirring this to prevent burning.

add about 2-3 cups of sugar and a pinch of salt and
keep stirring. add a few strands of saffron.

cook about a cup of rice separately,
put it in the milk.

turn the stove off and let it cool.
put it in the fridge overnight.

crush some pistachios and cashews and sprinkle
on top. some sliced almonds also goes well with this.
garnish with a twig of mint.

enjoy.

For general information Kheer in Hindi simply means rice pudding.

And yes shorter grained rice works better for kheer (rice pudding), as when cooking the rice would break anyway, and if you have long grains left when using longer grained rice then it would not taste as nice.
